St. John's University
Marillac Cafeteria
Graf & Lewent Architects was retained by St. John's University to completely renovate the existing kitchen facility, servery area and a portion of the dining hall in their main cafeteria. The final design of approximately 9,000 square feet incorporates 2,500 square feet of kitchen areas and a stand alone food concept with about 1,600 square feet. The space adjoins an existing dining hall of about 400 seats. Working closely with St. John's in house catering team, a kitchen consultant, several national food chains, the MEP firm and a lighting consultant, Graf & Lewent developed and coordinated an approach to open the space and make it lighter and more inviting while maintaining identities for the individual food concepts. In total, there are six food concepts with a separate convenience area or "Grab N Go" that is open 24/7. The design and construction process was extremely tight and the entire process was completed in seven months to be open in time for their fall semester.
